I posted a few sandwich options in my other clean eating post about the best clean lunches out there, but after coming to college and realizing that sandwiches are quick, easy, and cheap, I began exploring a ton of other great sandwich combos. I suggest using whole grain sandwich thins, because I find that slices of bread are just too much for me and not as delicious as sandwich thins or English muffins.
Most of these sandwiches are grilled, and while you can always just slap these onto a frying pan, I suggest using a George Foreman Grill
or a panini press of some sort. This appliance saves so much time and you don’t have to deal that is the nonsense of flipping sandwiches. I use this daily, I think, and that’s why I’m recommending it to you guys.
Sandwich #1: Veggie Tuna Melt
Tuna isn’t my usual go-to since it contains trace amounts of mercury (so you don’t want to eat it more than once a week) but it has nutrients like omega-3’s that improve brain function, which is key for all you students out there who need your brain to kickass on a daily basis.
On the side I had almond butter and raisins on celery sticks.
Optional: add a slice of cheese.
Sandwich #2: Egg White Breakfast Sandwich
Scramble egg whites, and then set aside. Toast a whole wheat english muffin topped with spinach and pepperjack cheese in oven until melted, and then add egg. Optional: add a slice of tomato or diced bell pepper.
Sandwich #3: Savory Whole Wheat Crepe Wraps
I’ve shared my legendary whole wheat crepe recipe with all you wonderful people before, but did you know that savory crepes are delicious?
Chopped bell peppers, cashew creme, and spinach. Optional: Gruyère cheese.
You can make cashew cream by blending 1 cup of cashews with 3/4 cup water or less (depending on how thick you want it.) It’s a healthy way to add a creamy filling to any crepe!
Sandwich #4: Strawberry Summer Wrap
Here’s what’s in the wrap: strawberries, spinach, and plain greek yogurt sweetened with honey alllll wrapped together in a crepe. It’s a twist on my favorite salad (strawberries + walnuts + spinach).
Sandwich #5: Red Pepper Sandwich Wrap
You’ll need actual sandwich wraps for this one. Try and find one without sugar added.
This wrap contains red pepper hummus + bell peppers + spinach + any other veggies you want. Optional: cheese.
Sun-dried tomatoes are also a good addition to this wrap!
Sandwich #6: Nutty Grilled Sandwich
This sandwich is awesome! Chop an apple and some walnuts and put them on a whole wheat English muffin with almond butter and honey. Optional: top with cinnamon.
Even better, grill this sandwich!
Sandwich #7: Late Night Scramble Wrap
I don’t know about you guys, but I always crave breakfast around midnight/1am. That’s why I make scrambled eggs, throw in some spinach and bell peppers, and then wrap that in a sandwich wrap! The more veggies the better, and you can melt cheese if you want, but it tastes great without that as well.
Sandwich #8: Black Bean and Avocado
This one is a bit more complicated and more of a dinner recipe.
Put the following in a sandwich wrap: guacamole + 1 cup of cooked black beans + 4tbspn of plain greek yogurt + any other chopped veggies you want!
Sandwich #9: Mediterranean Wrap
Hummus, veggies, olives, and feta cheese make the perfect Mediterranean wrap!
Sandwich #10: Grilled Banana
Almond butter, banana, honey, and chopped nuts on a whole wheat sandwich are a yummy breakfast idea. Even better grilled!
